Spicy Peach Pork Tenderloin

I posted this recipe a few years back on Instagram and I'll tell you what - it's one of my favorites. Not only is it a show stopper for plating, but even my picky eaters love it. I always double my sauce - that's the best part. The sweet blend of fresh peaches with jalapeño - mmmmm - has my mouth watering. It's so, so good!


My hubby is all about having the right tools in the kitchen and I'm all about less dishes so I made this with my coated dutch oven which I've included a link for, but any oven safe dish will do. You can sear the pork in a pan and then transfer it to a dish for baking.

SPICY PEACH PORK TENDERLOIN


MARINADE

2-3 lbs pork tenderloin

3 cups warm water

1/4 cup red wine vinegar

1 TBL pure maple syrup

3 TBL kosher salt


JALEPENO SAUCE

1 TBL butter

1 TBL corn starch

1 large jalapeño, diced

1/2 cup peach preserves

1/2 cup sparkling apple juice


INSTRUCTIONS

  1. Combine all marinade ingredients and marinate pork for 20-30 minutes (yes - only 30 minutes is needed. If left in the marinade for too long the marinade will start breaking down the pork to much which leads to a mushy mouthful)

  2. Preheat oven to 400°.

  3. Pat the pork dry and sprinkle liberally with ground pepper.

  4. Heat a large dutch oven pot on medium high and add 1-2 TBL olive oil. Add the pork and sear on all sides. Cover with lid and place in the oven for about 20 minutes or until internal temperature reaches 145°.

  5. While pork gets happy, combine all sauce ingredients in a sauce pan (you may want to double this - it's VERY tasty). Bring to a boil for 1 minute (or until it thickens).

  6. Slice pork, top with sauce, fresh peaches and serve with seasonal veggies! ENJOY!
